Fresh, healthy, quick meal.
Ingredients (makes 2):
Salmon
Olive oil
1 Avocado
1 tsp Parsley
½ cup Greek Yoghurt
2 tbsp Mayo
10 Cherry Tomatoes
METHOD
Preheat the oven to 180.
Drizzle with olive oil and wrap in tin foil, sprinkle over seasoning.
- Bake for 10-12 minutes, while the salmon is roasting. Blend together the avocado, parsley, greek yoghurt and mayo.
- Slice the cherry tomato and build your wrap once the salmon has cooled slightly and enjoy.
