Luxury Moules Marinade Recipe

Ingredients (for 4-6 people):

New Zealand Half Shell Mussels

1 chopped garlic clove

2 chopped shallots

Knob of butter

Parsley

Thyme

Bay leaves

100ml white wine

120ml double cream

Handful of parsley leaves 

Crusty bread

METHOD

  1. Begin by defrosting the mussels.
  2. In a large pan, on medium heat fry up the garlic, shallots, butter, parsley, thyme and bay leaves.
  3. Add the mussels and wine, turn up the heat and cover with a lid for 3-4 minutes.
  4. Remove the thyme and bay leaves, add the cream and remove from the heat.
  5. Serve in bowls with fresh bread.
