Chinese Lemon Chicken with honey, lemon and garlic sauce.
Ingredients:
Chicken:
- Chicken breast
- 1 egg
- 2 tablespoons of soy sauce
- 2 tablespoons of white vinegar
- ½ cup of corn starch/flour
- ½ cup vegetable oil
Sauce:
- 1 tablespoon oil
- 3 teaspoons minced garlic
- 1 teaspoon finely grated ginger
- ½ cup chicken stock
- 2 tablespoons soy sauce
- 1 lemon
- 2 tablespoons sugar
- 2 tablespoons honey
- Salt
- 2 teaspoons cornstarch
- 1 teaspoon sesame seeds
Method
- Mix together the whisked egg, soy sauce and vinegar. Mix in the chicken and then marinate in the fridge for 20 minutes.
- Place the flour or cornstarch on a baking tray, pour the chicken and marinate on to the tray and coat the chicken evenly.
- Heat oil in wok over a medium to high heat, until it reaches 165°C. Shake off the excess cornstarch and fry the chicken pieces in batches for about 5 minutes, turning half way through until golden and cooked through.
- Drain on a paper towel and set to the side.
- Fry the garlic and ginger, then add the stock and whisk in the soy sauce, lemon juice, sugar, honey, and a pinch of salt – until the sugar dissolves.
- Whisk the flour into the simmering sauce and stir until thickened. Add in the chicken for 2 minutes. Plate up and garnish.
